Family Friendly Sweet Potato Dishes
In my "About Me" section I talk about cooking sweet potatoes 3 nights a week. Don't laugh, because it's not a joke! We love sweet potatoes, but I don't love a traditional baked sweet potato with cinnamon and butter. I usually prefer a savory dish, and we make lots of savory sweet potato dishes at our house! I can't wait to share some of my very favorite recipes with you.

BBQ Chicken Baked Sweet Potato
Ingredients:
- Sweet potato
- Chicken breasts
- BBQ sauce
- Black beans
This is a super easy dish! Almost everything I make is easy. I don't usually feel like slaving away in the kitchen at then end of the day, but I do love putting healthy and delicious food on the table for my family. In comes this meal!
Directions:
Grab your Crock Pot, dump in some chicken breasts, a can of black beans, and your BBQ sauce (we used a Tangy Carolina sauce from Trader Joe's that was super yummy).
Cook on low all day or on high for 1/2 the day. Shred the chicken when done.
Wash your sweet potatoes and poke with a fork. Bake at 350-400 degrees until done. I'd give you a time frame, but it really depends on the size of your sweet potatoes! Maybe around an hour.
Cut the sweet potatoes in half and top with your Crock Pot BBQ mixture. DONE!
Jarrod likes to add cheese, and sometimes we're really crazy and slap a fried egg on top! You could add corn to the Crock Pot as well. I don't think you can mess this one up!

Sweet Potato Spread Breakfast Sandwich
Ingredients:
- Ciabatta roll
- Bacon
- Egg
- Baked sweet potato
- Avocado
- Cinnamon sugar
- Honey
- Garlic salt
This breakfast sandwich will exceed any breakfast expectations you could possibly dream up. I dare you to try it without mmmmhmm-ing with every bite!
Directions:
Cook your bacon by whatever method you prefer, and save the drippings.
Fry up an egg. Over medium is perfect if you love runny eggs.
Scoop the sweet potato flesh out of the skin and put in a mixing bowl. A stick blender, or hand mixer works great to mash the sweet potato with a bit of honey, cinnamon sugar, garlic salt, and drippings from your bacon, hallelujah. Make this to taste. Add more of what you love.
Toast your ciabatta roll. Any bread you have on hand would work. If you have an everything bagel, you win the prize.
Slice your avocado.
Now assemble your sandwich. A generous slathering of sweet potato spread is required. Trust me. Angels will sing.
Roasted Sweet Potato Kitchen Sink Medley
Ingredients:
- Sweet potatoes
- Ground beef or turkey
- Black beans
- Can of diced tomatoes
- Minced garlic
- EVOO
We make a variation of this meal at least once a week. There are so many ways to play with this recipe, and we are constantly trying something different. Get creative!
Directions:
Wash and dice your sweet potatoes and put in a casserole dish. I usually do 4-5 sweet potatoes because they always shrink when they cook.
Toss in EVOO, add minced garlic heavy handedly because theres never too much garlic, and spices to taste. I use Trader Joe's Garlic Salt and Trader Joe's Everyday Seasoning.
Bake in a 350 degree oven for 45 minutes or an hour. We like them a little bit crispy.
Brown your ground meat in a pan with your favorite seasonings (I use the ones I mentioned above), add a can of black beans, minced garlic, and a drained can of diced tomatoes. Let cook until the juices are evaporated.
Heres where you get to choose what you want to do!
Sometimes I put the meat mixture on top of the sweet potatoes and bake for a bit longer with shredded cheese. Then we eat it like a casserole. Sometimes I add the meat mixture on top of the sweet potatoes without the cheese and we eat it like a dip with blue corn tortilla chips (this is Boston's favorite). Other times we keep it separate and eat like pictured. If we do it that way I like to save some diced sweet potatoes for breakfast with a fried egg the next morning! It's so versatile! If we're out of diced tomatoes, no big deal. Throw a diced onion in to roast with the sweet potatoes, and you'll love it that way too!
Sweet Potato Hash-brown Egg Nests
Ingredients:
- Sweet potatoes
- Eggs
- EVOO
- Garlic salt
This meal is one of my favorites, but my boys don't ooh and aah over it as much as I do. It's a good bit of work, so I only make this one when I'm feeling fun!
Directions:
Pull out a cutting board and grater. Get to grating those sweet potatoes. It takes time, but it's worth it! Grate more than you think you'll need because these shrink when they cook too.
Heat up some EVOO in a seasoned cast iron skillet and add shredded sweet potatoes. I season with Trader Joe's Garlic Salt and Trader Joe's Everyday Seasoning (you need to get some, people). Cook over medium heat on the stove until the sweet potatoes are all beginning to crisp.
Make dips in the sweet potatoes with a large spoon and break one egg into each well.
Bake at 350 degrees. Pull the skillet out when your eggs are cooked to your liking, but beware of overcooking. I can't even guess and tell you how long I cook mine for. I use my nose as a timer. When it smells right, it's done. Super helpful for you, I know!
Christmas Cobbler
I think I'm the most proud of this recipe because I very recently came up with it! I've actually made it 2 times this week.... It's that good, y'all!
Ingredients:
- 1 sweet potato
- 1/2 a bag of fresh cranberries
- Mini marshmallows
- White sugar
- Brown sugar
- Vanilla
- Cinnamon
- 1 cup self rising flour
- 1 cup white sugar
- 1 cup Kerrygold unsalted butter
- 1 cup milk
I use this cobbler recipe all the time with raspberries and blackberries, but wanted a holiday feel! This cobbler is perfect to take to any holiday function!! Jarrod is a chocoholic and he says that this cobbler rivals any chocolate peanut butter dessert!
Directions:
For the filling-
Peel your sweet potato and slice to about 1/4 inch thick, then cut into quarters.
Steam sweet potatoes until soft and let cool.
Toss sweet potatoes with washed cranberries, white sugar, brown sugar, vanilla extract, and cinnamon. Use your nose. When it smells perfect, it is perfect. Set aside.
For cobbler batter:
Put 1 cup (or 1 stick) unsalted Kerrygold butter in an 8"x11" casserole dish. You can use any unsalted butter, but Kerrygold always makes every recipe better. Melt the butter in a 350 degree oven.
In a mixing bowl mix flour, 1 c. white sugar, and milk.
When butter is melted pour the batter over top. Do not stir.
Put a generous helping of marshmallows over the batter. Then spoon on the filling. Again, don't stir. The batter rises over the filling when cooking.
My oven bakes quickly, so it takes about 30 minutes to cook. Your oven might be different. Use the convection option if you have it. The marshmallows look like they will start to burn, so about halfway through top with foil. At the end, take the foil off for a few minutes.
Serve with vanilla ice cream!
I had leftover filling and put it in my plain oatmeal the next morning and it was DELISH!
